I couldn’t be more excited to share my blog with everyone today. I’ve been toying around with the idea for a few years now, and I finally came to the realization that there's no better time than the present. It’s been such a foreign feeling to me; letting the world in on my thoughts, ideas and creations, but I’m very happy to finally put it all out there. My name is Kristen Peterson and I’m a Registered Dietitian Nutritionist who works in a long-term care clinical setting right now (most people say “old folks home” but it’s much more than that!). I’ve been an RDN going on two years now, so I’m still learning and exploring every day. I went to West Chester University (in PA) for both my Bachelor’s degree in Nutrition, and my Masters in Public Health with a concentration in Nutrition. Throughout my career as a student, I worked my way up from a dietary aide in a nearby hospital to a nutritionist at WIC, counseling families and children.
I probably would’ve been ashamed to admit it three years ago, but I had to apply for the dietetic internship THREE times before I finally got accepted. So any dietetic students feeling defeated from internship applications, just keep pushing! That’s the best advice I can give; persistence will get you where you want to be. I completed my distance internship in 6 months and got right into the working world. I found a job just about two weeks after I completed my internship and was able to start practicing as a dietitian. I continued working while studying for my board exam and anxiously passed my PA boards a few months later. I felt like my mission was complete, I was FINALLY a Registered Dietitian Nutritionst, and I've been in a clinical setting ever since. Although I love the challenge and science of medical nutrition therapy, I love cooking and trying new foods even more. My love for food is what brought me to the idea of writing a blog. So here it is, all of my ideas and creations laid out for everyone to see. I hope you enjoy the different foods I come up with. I’ve been focusing on foods that are simple, wholesome, and healthful. WARNING: My recipes will not all be low-fat, low-cal and taste like you're on a diet. Living a healthy lifestyle requires enjoyment of your foods and that's what I strive for; making tasty recipes while keeping calories and health in mind. Every recipe on here I’ve made, eaten, and made again because they’re all so delicious. Just to be clear, this isn’t a diet plan or a way to lose 10 pounds in a week. This is a platform for anyone who wants to integrate healthier meals (yet still tasty!) into their daily life. Feedback, suggestions and questions/comments are welcomed with open arms!
