This recipe turned out to be a happy accident for me. I was making chicken burgers and didn't have any breadcrumbs. So, turning my right-side of my brain on, I ended up adding steel cut oats and chia seeds to the burger. It was the msot satisfying feeling when I took them out of the oven and they were huge! Usually burgers cook down and end up being smaller after being cooked; not these burgers.
Pictured below is a fancy way to make these. Beatiful colors, differences in texture, and super healthy! From the bottom up, this dish includes spaghetti squash, burger, guacamole, and purple cabbage. Try it this way, or try it as a regular old burger! You could also make meatball versions of this and have them for lunch!

Makes 4 servings
Serving size: 1 burger
150 kcals, 5g fat, 15g carb, 10g protein
1 pound ground chicken or turkey
1/3 cup raw steel-cut oats
1 tbsp chia seeds
1 tsp red pepper flakes
1 tsp garlic powder
1 tsp onion powder
salt and pepper to taste
Preheat oven to 350⁰ and spray sheet pan with non-stick spray.
Mix all ingredients listed above together.
Form into four patties, place on sheet pan.
Bake in oven for 25 minutes.
Assemble your burger and enjoy!
